After our daughter`s recent graduation, we wanted to take about 80 friends and family back to a place where we could relax and enjoy each other`s company. We had people there from four different generations. Parker`s put a fabulous menu together and made all of us feel very welcome, even the kids.

Where would be the first place you think of when you think baby back ribs? Kansas City? The Carolinas? Southern Georgia? Any one of the million TGI McFunster`s cookie cutter "restaurants"? (shudder) How about... New Hampshire. Now, my friends, I have had a lot of ribs in my time on this planet. Just ask my cardiologist`s accountant. I`ve sampled this porcine delicacy from San Diego California to Caribou Maine and most points in between, but none of those can even attempt to touch the ones at Parker`s Maple Barn in Mason, New Hampshire. Parker`s holds the gloppy, cloyingly sweet, tomato based sauces; skips the salty, overly spicy rubs, and follows the k.i.s.s. rule. Simplicity is the governing creed. They apply a super light maple glaze, a bit of smoke, a lot of time, and the result? Genuine, sticky, fatty, "fall off the bone", porky nirvana. Three ingredients: Local farm raised pork, real maple syrup from trees in their beautiful back woods, and care. That`s it. That`s not to say there isn`t other things worthy of your dining buck at Parkers. The usual breakfast fair is above average, and to say the portions are "ample" would be a gross understatement. (I especially like watching kids try to finish just one of the dinner plate sized, big as your head, pancakes) The service, especially when the place is hopping (and boy, it gets hopping) can only be described as friendly, and efficient mayhem. But Oddly enough for a place that specializes in breakfast, it is those ribs that call to me with its savory siren`s song. The ribs that point my truck north to Mason on a given lazy Sunday morning in the cold, muddy New England sugaring season. Those amazing ribs. One complaint I have though. It was not until my fourth visit to Parker`s Maple Barn that I discovered that these magnificent creations were even on the menu! They are tucked away on the second page with the Ham Hash, English muffins, and various other "sides". Heresy I say! An absolute travesty! Might I suggest that you move them to front page and center, where they belong. And might I suggest to anyone who reads these words to head to Mason immediately. There is real magic happening in those New Hampshire woods.
